Fleur 2005Entre Deux Mers 2005White 70% Sauvignon The grapes, specially selected for their quality and freshness, undergo cold maceration for about 24 hours. After pressing and debourbage the juice then passes to the fermentation stage. An important part of the fermentation is the special selection of yeasts, which leads to the complexity and finesse of the wine. Fermentation lasts for about 3 weeks at a average temperature of 16 - 18 deg. C. Vinification is on the wines 'lees' for several months, with the blending taking place quickly in order to preserve the harmony. Bottling takes place before the heat of June. The 2005 vintage is generally considered the best in living memory. Jean-Marie's notes Tasting notes: The Sauvignon grapes provide the fruity, floral notes in the blend; they have a particularly expressive, almost 'volatile' nose, and are the main provider for the aroma of the wine. The Semillon grapes provide more for the palate of the wine. They are
'fat' in character and develop the fruitiness experienced on the palate.
Drinking advice: Excellent either drunk as an aperitif or with a meal. Particularly recommended with fish dishes and seafood, this wine is a great all-rounder. |
