Domaine de la Tour
Domaine de la Tour is situated at Lignorelles in the north-west of
the Chablis region, but its vineyards are scattered throughout the region
enabling it to offer a variety of wines from this prestigious white wine
growing area. The history of the domaine stretches back over 200 years,
but now it is Renato Fabrici who finds himself at its helm. He uses traditional
wine-making techniques, but is not afraid to embrace up-to-date methods
where necessary as evidenced by his recent investment in new stainless
steel vats.
The Chardonnay grape is at the heart of everything Renato does. It grows in the clay chalk soil and produces a wine of unique taste, combining fruity aromas with exotic fruits, and a 'mineral' taste with gunflint overtones.
Renato has systematically gone about his work to reduce the reliance on herbicides and produce a premium quality wine. He has hard pruned his young vines to encourage their roots to grow deeper into the soil. He has recently reduced the yield of his vines by pruning back to one shoot. The results of his efforts are now being seen in the 2005 vintage.
