France Uncorked Cognac region, Charentais

The Charentais valley has a soil rich in chalk, a mild, temperate climate, plenty of sunshine and is favourable to vine culture. It is the home to Cognac, extends to 200,000 hectares along the banks of the Charente and is divided into 6 'crus'. The marriage of these different 'crus' - Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois and Bois Ordinaires - gives each Cognac its unique quality.

Since 1909 - the date of a decree protecting the area as an 'appellation d'origine contrôlée' - the Cognac area has been the only one able to produce the spirit of its name. The eau-de-vie has to be distilled and aged in the designated area using approved methods - notably double distillation in a Charentais copper still, and maturation in oak casks, respecting the minimum age criteria for it to be classified as 'Cognac'.

We work with the Roux family who own the Domaine Castel Sablons, near Archiac in the 'Fins Bois' region.
