France Uncorked The Chablis vineyards

Chablis

The Chablis vineyards are situated near the town of Auxerre, to the very north of the Burgundy region. A little over a hundred years ago, the Yonne was one of the most prosperous wine regions in France, and the vineyards stretched down to meet those of the Cote-D'Or. The Chablis wines were shipped on wooden rafts along the waterways to the Seine and up to Paris.

It's northerly situation means that traditionally frost has been Chablis's greatest enemy. Thankfully the wine merchants of Beaune traded Chablis with the best of their Beaune wines, and Chablis developed a close association with the best of these wines. Some years later the idea of sprinkler systems in the vineyards was hatched which formed a protective layer on the vine shoots and protected them from frost. The future of Chablis was secured.

The wines are made only from the Chardonnay grape and characterised by a paleness of colour, with a crispness of taste made distinct by mineral overtones.

We work with the Fabrici family of Domaine de le Tour. A dynamic family of winemakers, headed up by Renato Fabrici, their base is Lignorelles, but they produce a full range of wines from Chablis premier cru, through Chablis to Petit Chablis, Bourgogne and Bourgogne Aligote.

The name 'Domaine de le Tour' is derived from Renato's home which boasts a centuries old tower as one of its features. The wines are produced using a blend of traditional methods underpinned by modern techniques, but above all chemicals and pesticides are kept to a minimum out of respect for our natural surroundings.
