During the flaming of the cognac in the saucer and on the coffee, a strange effect happens. The coffee seems to undergo a second reaction and takes on the flavours of mocha and cream. In the saucer there remains a concentrated 'liqueur' with an alcohol taste combined with fruit conserve (pear, prune, apricot...) which can be poured into the coffee cup.
The 'woodiness' of the cognac becomes 'nutty' and slightly praline. The resulting mixture is weak in alcohol (2-3%) and has a perfect balanced sugar-bitter-sour taste. It also has a superb lengthy aftertaste.
